Leash Melon Soup, a real stopper, is as much fun to look at as it is refreshing to eat. The key, tho’, is to start with the ripest and near fragrant fruits available. In the condition of cantaloupes and honeydews, the first alteration is to smell the stem end to make certain it smells strongly of melon. With melon, begin by searching for a large craven spot on the outside — a sign that the gourd ripened for a good long future in the sun. (Watermelons don’t rotate as they maturate; the yellow spot marks the parting never exposed to the sun. The larger the daub, the longer it ripened.)

Given its characteristic sweetness, melon cries out for an acidulent counterpoint. Citrus is the best pick. Here we use orange, lemon and adhesive, one for each of the three melons — tho’ lemon or lime will bullwork for the group of them if you’d prefer not to buy all deuce-ace types. Also, the amount of citrus formal is given as a range because an alone melon may need more or fewer acid depending on its sweetness. First with the smallest amount, adding besides until it’s no longer flat.

This soup’s blinding good looks — a kaleidoscope of red, deceitful and green — result from the detail that each of the three purees preserve to itself. And you don’t need to be a professional board stylist to pull off this stratagem — just spoon the purees into abstracted parts of the bowl.

I offer this method in two versions: plain or fancy. The earlier is garnished with sour skim or yogurt, strawberries and mint. The closing boasts a savory garnish: salt cheese, tortilla strips and chopped chiles. All of the purees can be prepared distinct days ahead of time, and you can look-alike or triple the recipe with no botheration, which makes it a perfect aspirant for a large backyard party.

Servings: 4

3 cups coarsely sliced honeydew melon, plus 1/2 cup immature cubes honeydew melon

2 to 4 tablespoons original lime juice

3 cups coarsely sliced seedless watermelon, plus 1/2 cup bantam cubes watermelon

2 to 4 tablespoons advanced lemon juice

3 cups coarsely shredded cantaloupe melon, plus 1/2 cup little cubes cantaloupe melon

1/4 cup advantageous 2 tablespoons orange juice

Usual garnishes:

1/2 cup chopped strawberries

1/4 cup work cream

Fresh mint be off

Savory garnishes:

1/2 cup crushed tortilla fragment

1/3 cup crumbled feta cheese

1 inadequate serrano, sliced thin cross

In a blender combine the coarsely shredded honeydew with 2 tablespoons of the adhesive juice and blend until fine pureed. Taste and add more linden juice if necessary. Transfer to a trough, rinse out the blender and add the coarsely shredded watermelon and 2 tablespoons of the lemon succus. Blend until finely pureed; drop and add more lemon juice if binding. Transfer to a bowl, rinse out the liquidizer and add the coarsely chopped cantaloupe, chromatic juice and 1 tablespoon lemon sap. Blend until finely pureed; discernment and add more lemon juice if imperative. Transfer to a bowl. Chill all trey melon purees for at least 3 hours.

To minister to: Remove the purees from the icebox and stir each one (the water in the gourd will separate out as it sits). Spoonful or pour equal amounts of Everyone puree into each of quartet bowls and garnish with either the standard or savory garnishes.
